Chopped cashews contribute additional crunch and flavor, while chow mein noodles provide a crisp element that contrasts with the tender salad greens and dressing. Mixing salad components just before serving helps maintain the crispness of the vegetables and noodles. The dressing brings a balanced combination of creamy, tangy, spicy, and slightly sweet notes.
If the dressing is too thick, gradually adding water can thin it for easier tossing. Storing the dressing separate from the salad prevents sogginess. - 2 tablespoons tamari sauce low sodium, or soy sauce
- 2 cloves garlic (finely minced or use garlic press)
- 1 teaspoon ginger grated
- 1 tablespoon honey
- 1 teaspoon sesame oil toasted
- 2 tablespoons avocado oil or olive oil
- 1 teaspoon huy fong chili paste or more depending on preference, or 1/4 tsp crushed red pepper flakes
Salad Components
- 1 head romaine lettuce washed/dried, cut into 1 inch sections (about 4 cups
- 1 cup purple cabbage shredded
- 1 cup green cabbage shredded
- 1/2 cup carrot matchstick cut
- 1/2 cup edamame beans (prepared according to package)
- 1/3 cup cashews (roughly chopped)
- 1/4 cup cilantro (roughly chopped)
- 1/3 cup Chow Mein noodles crispy
Instructions
- In a small bowl, whisk together all of the dressing ingredients, you may also use a blender. Taste and adjust seasoning if needed (see note #1).
- In a large bowl, mix together all the salad components and then drizzle the spicy peanut dressing over the top. Serve alone as is, with grilled chicken, or grilled shrimp.
Notes
- Thin the dressing with 1–2 tablespoons of water if needed.
- Store salad and dressing separately to keep salad crisp.
- Keep dressing in an airtight container up to one week; whisk before use to recombine.
