Asian Salad with Spicy Peanut Dressing

This Asian Salad with Spicy Peanut Dressing balances crisp romaine lettuce, shredded cabbage, matchstick carrots, and edamame beans with a creamy, spicy peanut dressing made from peanut butter, rice wine vinegar, lime juice, tamari, and chili paste. Toasted sesame and avocado oils round out the flavor, while chopped cashews and crispy chow mein noodles add crunchy texture contrasts. The dressing can be thinned to taste and is best served freshly tossed to retain the crunch of the salad components.

Description

This salad combines romaine lettuce and a mix of purple and green cabbage shredded finely to create a crunchy and fresh base. Matchstick-cut carrots and prepared edamame beans add layers of texture and subtle sweetness. The creamy dressing includes peanut butter blended with rice wine vinegar, lime juice, tamari or soy sauce, fresh garlic and ginger for brightness, honey for sweetness, sesame oil for nuttiness, avocado oil for smooth richness, and a kick from chili paste or red pepper flakes for heat.

Chopped cashews contribute additional crunch and flavor, while chow mein noodles provide a crisp element that contrasts with the tender salad greens and dressing. Mixing salad components just before serving helps maintain the crispness of the vegetables and noodles. The dressing brings a balanced combination of creamy, tangy, spicy, and slightly sweet notes.

If the dressing is too thick, gradually adding water can thin it for easier tossing. Storing the dressing separate from the salad prevents sogginess. The dressing keeps well for up to a week if kept airtight, shaking or whisking before use to recombine ingredients. The salad pairs well with grilled chicken or shrimp for a fuller meal but also stands well on its own as a bright side dish.
