Asian Sesame Dressing
Description
This dressing blends soy sauce, toasted sesame oil, white vinegar, olive oil, and a sweetener such as sugar or honey. The ingredients are combined and shaken thoroughly to dissolve the sugar and unify the flavors. The mixture offers a harmonious balance between salty, nutty, acidic, and sweet components.
The toasted sesame oil provides a distinctive Asian aroma and richness, while soy sauce contributes umami. Olive oil gives body and smoothness despite not being traditional in Asian dressings. Vinegar offers acidity to brighten the flavor, and sugar rounds it with a mild sweetness.
It is suitable for drizzling over shredded cabbage salads or leafy greens, with typical usage proportion being about one tablespoon per packed cup of shredded vegetables. The dressing can be kept refrigerated up to three weeks, shaken before each use to re-emulsify.
While olive oil is unconventional in Asian cuisine, its mild flavor works well here. Options for neutral oils can be used alternatively depending on preference.
Ingredients
Big batch to keep (makes 1 cup)
- 1/4 cup soy sauce
- 2 tbsp sesame oil toasted
- 1/4 cup white vinegar (adjust to taste for sharpness)
- 1/4 cup olive oil (Note 1)
- 1 tbsp sugar (any type) or 1 1/2 tbsp honey
Single serving batch
- 1 tbsp soy sauce

Instructions
- Place ingredients in a jar and shake well until sugar is dissolved. Adjust saltiness with salt and sweetness with sugar to taste.
- Keep for up to 3 weeks, in the fridge (to be safe). Bring to room temp and shake well before use.
- Single serving batch is enough for 3 - 4 cups of shredded cabbage / leafy greens i.e. a side salad for 4 people.
- Big batch - my rule of thumb for how much dressing to use is generally 1 tbsp of dressing per 1 packed cup of shredded vegetables and 2 tsp per handful of leafy greens.
Notes
- Olive oil, though not traditional in Asian sauces, contributes a pleasant flavor; extra virgin olive oil can be used for more pronounced taste.
- The dressing keeps up to three weeks refrigerated; bring to room temperature and shake well before each use.
- Use about one tablespoon of dressing per packed cup of shredded vegetables or two teaspoons per handful of leafy greens as a guideline.
