Asian Slaw
Description
This Asian Slaw starts by mixing a dressing from mayonnaise, sriracha, fish sauce, lime juice, sugar, and minced garlic to balance spicy, tangy, salty, and sweet notes. The salad base includes coleslaw mix, thinly sliced green onions, and chopped cilantro tossed halfway with the dressing and left to sit 30 minutes to soften slightly.
Right before serving, the slaw is finished with crunchy Asian-style noodles and additional dressing to add texture and flavor brightness. Extra cilantro leaves garnish for freshness. The fish sauce adds umami depth without a strong fish flavor, balanced by lime and sriracha heat.
Served chilled or at room temperature, this slaw pairs well as a side for grilled meats, sandwiches, or casual meals where a spicy, creamy crunch complements a variety of flavors.
May substitute soy sauce for fish sauce if unavailable, as it maintains saltiness though with different nuances. Fried wonton strips or chow mein noodles work as crunchy alternatives to Asian noodles.
Ingredients
- 16 ounces coleslaw mix
- 3 green onions finely sliced on the diagonal
- ½ cup cilantro plus more for garnish, leaves
- ¾ cup noodles crunchy
Asian Slaw Dressing
- ⅔ cup mayonnaise
- 2 tablespoons sriracha adjust to taste
- 2 teaspoons fish sauce adjust to taste for saltiness
- 1 ½ tablespoons lime juice adjust to taste
- 2 teaspoons granulated sugar
- 1 clove garlic minced
Instructions
- Mix together the mayo, Sriracha, fish sauce, lime juice, sugar, and garlic in a small bowl or mason jar.
- Add the coleslaw mix, green onion, and cilantro into a large mixing bowl. Toss through with half the dressing. Set aside for 30 minutes to wilt slightly.
- Just before serving, toss the slaw with crunchy noodles and more dressing, if desired.
