Description
This recipe combines shredded cabbage, carrot, thinly sliced scallions, and red bell pepper to create a fresh, crunchy base. The accompanying dressing is blended smooth from grated ginger, mayonnaise (such as avocado oil or vegan mayo), sesame oil, tamari or soy sauce, rice vinegar, and mirin, contributing a balance of creamy, tangy, savory, and slightly sweet notes. Tossing the dressing thoroughly coats the vegetable mix, making a salad with both crunch and rich dressing.
Sesame seeds sprinkled on top add contrast and a nutty pop. This slaw keeps well refrigerated for several days and suits as a refreshing side for Asian-inspired meals or as a vibrant salad addition to many lunches or dinners.
Using a combination of green and red cabbage adds visual appeal but napa or other cabbages could be used as well for variation.
Ingredients
Slaw
- 1 lb cabbage shredded, about 5 cups
- 1 cup carrot shredded
- 1 cup scallions sliced
- 1 red bell pepper thinly sliced (about 1 cup)
- white sesame seeds for topping, or black sesame seeds
Asian Dressing
- 1 tablespoon ginger grated
- 3 Tablespoons mayonnaise I like avocado oil mayo, but vegan mayo works too
- 2 Tablespoons sesame oil I like spicy sesame oil
- 2 Tablespoons tamari coconut aminos or soy sauce works too, low-sodium
- 1 Tablespoon rice vinegar
- 1 Tablespoon mirin
Instructions
- Toss together slaw ingredients in a large salad bowl.
- Add all ingredients for the dressing into a blender and blend until smooth and creamy. Pour over slaw and toss to combine. Top with sesame seeds and serve. Slaw will keep for 4-5 days in the fridge.
Notes
- Feel free to use napa, green, red, or a combination of cabbages for varied color and texture.
- This slaw holds for 4-5 days when stored refrigerated, making it ideal for meal prep or make-ahead sides.
