Asian Tuna Steak Recipe

The Asian Tuna Steak recipe marinates fresh tuna steaks in a mixture of olive and sesame oils, ginger, soy sauce, garlic powder, rice vinegar, and sesame seeds. Grilled over high heat, the tuna develops a sesame seed crust and a charred exterior while remaining tender inside. Finished with green onions and additional sesame seeds, this dish balances savory flavors and a crisp texture for a flavorful main course.

Description

This recipe highlights the marinade combining olive oil, sesame oil, ground ginger, soy sauce, garlic powder, rice vinegar, and sesame seeds, which imparts an Asian-inspired flavor profile to the tuna steaks. After marinating for at least 20 minutes or up to overnight, the steaks are coated with extra sesame seeds for a crust and grilled for 2-3 minutes per side over medium-high heat, achieving a charred exterior and tender medium-rare center if cooked to 135°F.

The grilling process develops a flavorful, slightly crispy crust from the sesame seeds, while the reserved marinade is drizzled on during cooking and served atop the fish alongside sliced green onions. This method keeps the tuna moist and enhances its natural taste with the marinade’s umami and tangy notes.

Serve the grilled tuna steaks as a main dish, ideally paired with steamed rice or a light salad. The combination of textures from the crust and the tender fish, along with fresh garnishes, makes it well-suited for a simple yet distinctive meal.

Ingredients

Servings
  • 2 tuna steaks
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger ground
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon rice vinegar
  • 2 tablespoons sesame seeds divided
  • green onion sliced, to garnish

Instructions

  1. Preheat grill to medium-high (350 degrees F)
  2. In a small bowl, mix olive oil, sesame oil, ginger, soy sauce, garlic powder, rice vinegar, and half sesame seeds.
  3. Pour half sauce over tuna steaks, and reserve half for finishing tuna.
  4. Let fish marinate, refrigerated, for at least 20 minutes (as grill comes to temperature) up to overnight.
  5. When grill is scorching hot, remove tuna steaks from the marinade and discard excess the mariande fish was sitting in.
  6. Cover fish with 1 tablespoon of sesame seeds to make a "crust" before grilling. Add more than 1 tablespoon if needed.
  7. Place steaks on grill.
  8. Grill 2-3 minutes per side, drizzling a bit of reserved sauce on top of fish as it cooks, until fish is charred on each side.
  9. For medium-rare tuna steaks, cook to 135 degrees F. The FDA recommends 145 degrees F.
  10. Remove tuna from grill, and top with reserved sauce, green onions, and additional sesame seeds.
  11. Enjoy!
