Asparagus Puffs

Asparagus, spring peas, and fresh herbs are a taste of spring combined in convenient puff pastry packages for a perfect springtime appetizer.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 shallot minced
  • 1 clove garlic minced
  • ½ cup asparagus chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup peas fresh or thawed frozen
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup Parmesan Cheese grated
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh dill chopped
  • 1 sheet frozen puff pastry thawed
  • 2 tbsp butter melted

Instructions

  1. Have ready a 24 cavity non stick mini muffin tin, or one sprayed with cooking spray
  2. Heat oven to 400°
  3. Heat oil in a skillet over medium-high. 
  4. Add 1 tablespoon butter, the shallots, garlic, and asparagus. Saute until asparagus is tender crisp, about 3 minutes
  5. Remove from heat and stir in salt, pepper, peas, lemon juice and zest, thyme and dill.
  6. Cut puff pastry sheet into 24 2.5 " squares
  7. Line each muffin tin cup with a puff pastry square, pressing into the base of each cup. 
  8. Stir the grated Parmesan cheese into the asparagus mixture.
  9. Evenly divide the asparagus mixture into each cup. 
  10. Bring the four corners of the pastry squares together to cover the filling for each 
  11. Brush tops with melted butter. Bake until puffed and golden about 15 minutes. 
  12. Cool on a rack for 10 minutes before removing the puffs to a platter.  Serve warm or at room temperature.

Notes

  • Puff pastry should be completely thawed, but still cold before using. Leave the pastry to thaw in the fridge overnight, then take it out right before using.
