Description
Aspic Recipe (Russian Kholodets) involves simmering chicken thighs or drumsticks along with whole onions and carrots in water spiced with salt and black pepper for about four hours. This slow cooking releases gelatin from the chicken and bones into the broth, which is then strained.
After removing vegetables and deboning the chicken, the meat is shredded and combined with sliced carrots and fresh parsley and dill. Dissolved gelatin is added back to the broth before pouring over the chicken mixture in a flat pan. The entire dish is refrigerated for several hours until it solidifies into a clear jelly-like aspic.

Ingredients
- 4 qt water
- 1 lb chicken thigh rinsed, or drumsticks
- 1 yellow onion peeled, whole, large
- 2 carrot peeled, whole, large
- 2 tbsp gelatin
- 1 tbsp salt
- 1 tsp black pepper
- 2 tbsp parsley chopped, fresh
- 2 tbsp dill chopped, fresh
Instructions
- Place the cooking pot with water, chicken, carrots, onion, salt and pepper to taste. All just together and bring up to boil. Turn heat on really low and let cook for 4 hours.
- Remove carrots and onions. You can use carrots for decorations and you can throw away the onion. Remove chicken from pot. Clean chicken off the bone, break chicken into small pieces. In a 1/4 cup, add room temperature water and dissolve gelatin with water. Once its dissolved add to broth.
- In flat pan place chicken, carrots, and sprinkle with parsley and dill. Pour cooking broth over the chicken and herbs. Let it stay in the fridge to firm up, this process could take about 6 hours.
- Cut in cubes and serve.
