Atole De Arroz

Atole De Arroz is a creamy rice-based beverage thickened with pureed cooked rice and flavored with cinnamon, vanilla, evaporated and condensed milk. This traditional drink offers a sweet, comforting texture with a warm spice note ideal for cooler days or paired with sweet bread.

Description

Atole De Arroz starts by cooking rinsed white rice with cinnamon sticks in water until the rice is tender. Part of the rice and some milk is blended to form a smooth puree, which is added back to the pot along with additional milk, evaporated milk, condensed milk, and vanilla extract. The mixture is heated gently until it thickens slightly, careful not to boil over.

The drink has a creamy consistency with a balance of sweetness from the condensed milk and warm cinnamon spice. Cooking the rice and blending it provides a thick texture distinct from simply dissolving starch or flour.

It is traditionally served hot and is often accompanied by pan dulce or other sweet baked goods. This beverage suits colder weather or occasions that call for a sweet, velvety drink.

Ingredients

  • ½ cup white rice
  • 2 cups water
  • 1 large cinnamon stick or 2 medium ones
  • 4 cups whole milk or 2% milk
  • 1 can evaporated milk
  • ½ can condensed milk
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse the rice with cold water and drain.
  2. In a large pot, place the water, cinnamon and rice, let it cook over medium-low heat for 20 minutes. Cover pot with lid.
  3. When the rice is cooked, remove a cup of the cooked rice. Place it in the blender and add 2 cups of milk, process until you have a smooth consistency.
  4. In same pot, add the remaining amount of milk and evaporated milk, keep over medium-low heat until it heats through, being careful not to let it boil.
  5. When it's almost boiling, add the previously pureed rice, condensed milk and vanilla. Mix to incorporated well.
  6. Stir continuously to prevent the milk sticking to the pot at the bottom. Cook until it comes to a boil or has thickened slightly.
  7. Serve hot and accompany with your favorite pan dulce.
