Atole De Pinole
Description
Atole De Pinole combines the roasted ground corn mixture known as pinole with milk, cinnamon, and sweeteners to create a creamy, richly flavored hot beverage. The preparation involves dissolving the pinole in water, then simmering it with milk, cinnamon stick, vanilla, and either brown sugar or piloncillo over medium heat. The cooking is done with attentive stirring to achieve a thickened, smooth consistency without curdling or burning. The cinnamon and vanilla infuse warmth and aromatic depth, balancing the natural corn flavor of the pinole. The resulting drink is slightly thick, almost like a light gravy, offering a comforting and filling texture.
This atole is ideal to serve warm, particularly as a complement to sweet Mexican pastries such as empanaditas, churros, marranitos, or pan dulce. Its richness and thickness lend it well to pairing with these desserts during breakfast, afternoon snack, or celebrations. The simple ingredients and straightforward method make it feasible to prepare from pantry staples.
When preparing, monitor the simmer carefully to avoid overflow and stirring often prevents the milk from sticking and burning on the pot’s bottom. Adjust sweetness according to taste, especially if using piloncillo, which has a distinctive flavor. Drinking atole warm preserves its thick, creamy texture and comforting qualities.
Ingredients
- ½ cup pinole
- 4 cups milk your favorite kind
- 1 cinnamon stick
- ½ cup brown sugar or more to taste, or 2 ounce piloncillo
- ½ teaspoon vanilla extract
Instructions
- In 1 cup water, add the pinole to dissolve and set aside.

- Heat over medium high heat and when the milk starts to boil, add the pinole mixture and continue to cook over medium heat.

Notes
- Atole pairs well with sweet pastries such as empanaditas, churros, marranitos, or your favorite pan dulce for a traditional pairing.
