Atole de Vainilla

Description

This recipe combines water boiled with cinnamon stick and piloncillo to create a sweet, spiced base. After steeping, masa harina is whisked in gradually with milk and split vanilla bean seeds, then the mixture is heated gently to thicken. Simmering with occasional whisking achieves a creamy texture.

The resulting atole has a smooth, thick consistency with a balanced sweetness and fragrant vanilla and cinnamon flavors. It is often enjoyed as a warming drink.

Serve immediately sprinkled with ground cinnamon if desired. The recipe notes that leftovers can be refrigerated for up to four days and reheated gently with added milk or water to regain the right consistency.

  • 2 1/2 cups water
  • 1 cinnamon stick
  • 4 ounces piloncillo
  • 1/2 cup masa harina
  • 2 cups milk whole
  • 1 vanilla bean split in half lengthwise and seeds scraped
  • ground cinnamon optional

Instructions

  1. In a large saucepan bring water to a boil with the cinnamon stick and piloncillo. Remove from the heat, cover, and let the cinnamon stick steep and sugar dissolve for about 30 minutes.
  2. Remove the cinnamon stick, return water to low heat, and slowly add the masa harina, whisking until combined. Add milk and vanilla bean with seeds.
  3. Heat over medium heat just until boiling.
  4. Reduce heat and simmer, uncovered, whisking occasionally, about 20 minutes.
  5. Sprinkle with cinnamon and serve immediately.

Notes

  • Store leftover atole in a covered container in the fridge for up to four days.
  • Reheat gently on stove or microwave, adding milk or water to loosen if it thickens too much.
