Aunt Pauline's Missouri Cookies

Aunt Pauline's Missouri Cookies are no-bake no-churn chocolate peanut butter oat cookies that set without an oven. The mixture is boiled briefly to dissolve sugar and cocoa, then combined with chunky peanut butter and quick oats. Once spooned and cooled on parchment, the cookies firm into rustic, textured treats with a rich chocolate and nutty peanut butter flavor.

Description

This recipe uses a simple stovetop method where butter, sugar, cocoa powder, milk, and salt are melted and brought to a rolling boil to create a smooth chocolate syrup. Chunky peanut butter and vanilla flavoring are stirred in, then quick oats are folded in to give a hearty texture. The batter is scooped onto wax or parchment paper and left to cool to room temperature, solidifying into cookies with a rough, haystack shape.

The cookies develop a fudgy interior with a pronounced peanut butter and chocolate taste, balanced by the quick oats' chewiness. Because they don't require baking, these cookies are convenient and quick to prepare, and their textured surface reflects the no-bake style.

Serve these cookies as a casual sweet snack or dessert with milk or coffee. Their set texture holds well at room temperature.

Ingredients

Servings
  • 1/2 cup butter 1 stick, unsalted
  • 3/4 cup granulated sugar
  • 3 tablespoon cocoa powder
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • Dash salt
  • 3/4 cup peanut butter chunky
  • 3 cups quick oats

Instructions

  1. Melt butter in a saucepan over medium heat. Whisk in sugar, cocoa, milk and salt. Turn up heat and bring mixture to a full rolling boil for 1 minute. Remove from heat.
  2. Stir the chunky peanut butter and vanilla into the chocolate mixture.
  3. Add quick oats to the pan; mix all ingredients together till well combined.
  4. Form the mixture into small cookies (a heaping tablespoon of batter each) and lay them on wax or parchment paper to cool. Shape them like rough, flat haystacks-- they don't need to look perfect, that's part of the charm.
  5. Cookies will set in 30-45 minutes.
