Authentic Aguachile De Camaron
Description
The recipe begins by butterflying raw shrimp and removing veins, then marinating them in a blender-made sauce of jalapeño or serrano chilies, cilantro, water, and fresh lime juice. This acidic and spicy marinade "cooks" the shrimp through citric acid, giving the shrimp a firm but tender texture similar to ceviche. Red onion and cucumber slices can be mixed in or used as garnish, adding crunch and freshness.
The layering of flavor balances heat from the chilies, brightness from lime, herbaceous notes from cilantro, and smoothness from avocado. The dish is served chilled immediately after marinating for 10 to 20 minutes and eaten with tostadas or chips, making it a refreshing and quick seafood preparation.
Aguachile is best consumed the same day to preserve freshness and texture. Storing leftovers properly in an airtight container in the refrigerator is acceptable, but it should be eaten within 24 hours.
Ingredients
- 1 lb Shrimp It's okay to use previously frozen shrimp, good quality raw
- 1 jalapeno pepper stemmed and cut into ¼ -inch pieces, or 2 serrano chilies if you like it more spicy
- ¼ cup cilantro fresh
- 2 tablespoons water
- 6 tablespoons lime juice fresh juice from 4 limes
- kosher salt
- black pepper freshly ground
- ¼ cup red onion thinly sliced
- 1 cucumber thinly sliced
- 1 avocado sliced
- tostada or corn tortilla chips for serving
Instructions
- Slice the shrimp in half lengthwise and discard any veins. The process is to open it like a butterfly and not cutting all the way through.
- Transfer to a large dish or bowl and cover with plastic. Refrigerate while we prepare the rest of the ingredients.
- In a blender, add the chiles, cilantro, water & lime juice. Puree thoroughly.
- Add the aguachile mixture to the shrimps. Add the red onion and cucumber at this point if you would like. Otherwise, you can just garnish it when serving.
- Sprinkle some salt and pepper to taste then place in refrigerator for 10 to 20 minutes.
- Serve right away topped with sliced avocado, cucumbers and red onion. Eat with tostadas, tortilla chips, or saltines.
Notes
- Consume aguachile immediately for best taste and texture due to the raw shrimp.
- Store any leftovers in an airtight container in the refrigerator and consume within 24 hours.
