Description

This recipe starts by seasoning thin, pounded chicken breasts with salt and pepper. The chicken is then coated sequentially in flour, an egg and milk wash, and breadcrumbs to form a crispy crust when cooked. The chicken can be either fried in hot olive oil at 375°F until golden brown or baked in a 350°F oven for 15 to 20 minutes for a less oily option.

Once cooked, the chicken breasts are placed on a plate, pasta, or sandwich bread, then topped generously with warm marinara sauce, fresh mozzarella slices, and grated Parmigiano cheese. Fresh chopped basil is added for aroma and flavor. The dish is then placed under a broiler to melt and lightly brown the cheese, melding the flavors and textures into a rich, hearty entrée.

  • 4 chicken breasts boneless and pounded thin, skinless
  • 1/2 /2 teaspoon salt
  • 1/4 /4 teaspoon black pepper
  • 1 1/2 /2 cups flour
  • 3 egg
  • 2 tablespoon milk
  • 2 cups breadcrumbs
  • 1 cup olive oil (if frying)
  • 3 cups marinara sauce
  • 1 pound fresh mozzarella
  • 1/4 /4 cup Parmigiano Cheese fresh grated
  • 3 teaspoon basil chopped, fresh

Instructions

  1. Sprinkle the pounded chicken breasts with the salt and pepper rubbing both sides with the seasoning. 
  2. Place the flour in a small bowl, the bread crumbs in a separate bowl and the eggs and milk in a third bowl. Whisk together the eggs and milk
  3. Dip the chicken breasts into the flour and coat both sides. Then, dip the chicken into the egg followed by the breadcrumbs. Be sure to coat the chicken thoroughly in breadcrumbs then place on a foil lined baking tray.
  4. Repeat step number 3 with all the chicken breasts.
  5. If you are frying the chicken breasts, heat the 1 cup olive oil to 375 degrees F and fry each chicken breast until golden brown. If you are baking the chicken, place the sheet tray in a 350 degree oven and bake for 15 to 20 minutes. 
  6. Place the chicken breasts on a plate, on top of cooked pasta or on the bottom piece of sandwich bread. Pour warm marinara over the top of the chicken and top with the mozzarella and grated parmigiano.
  7. Place the chicken parmesan under a broiler for 2-3 minutes or until the cheese begins to bubble. 
  8. Sprinkle with the fresh basil and serve!
