Authentic Fogo de Chao Brazilian Cheese Bread

Crispy on the outside, chewy and cheesy on the inside, these Brazilian cheese puffs (Pão de Queijo) are just like the ones served at Fogo de Chao. Naturally gluten-free and incredibly addictive!

Ingredients

  • 1 1/2 cups whole milk
  • 1 1/2 cup sour tapioca flour aka sour cassava starch (polvilho azedo)
  • 1 cup sweet tapioca flour aka sweet cassava starch (polvilho doce)
  • 3/4 cup shredded Parmesan cheese
  • 3/4 cup corn oil
  • 4 eggs
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 425 degrees.
  2. Generously grease a 12- or 24-cup mini muffin pan or small dariole molds.
  3. Place all ingredients in a large bowl.
  4. Mix well until the batter is smooth.
  5. Fill each muffin cup three-quarters full.
  6. Bake at 425 degrees for 15 minutes or until golden brown. The bread puffs should be crisp on the outside and hollow on the inside, like a popover.
  7. Serve warm.

  • The key to authentic Brazilian cheese bread is using both sweet and sour tapioca flours, which can be found online or in specialty Brazilian markets. The combination creates that distinctive chewy texture that makes these puffs so addictive.
