Description

This recipe starts by seasoning and quickly searing the sirloin steak to develop a browned crust. Then, onions, bell peppers, and garlic are sautéed before adding peperoncini and crushed tomatoes combined with Italian herbs and a touch of heat from red pepper flakes. The steak returns to the pan and gently simmers in this sauce, absorbing robust tomato and pepper flavors while tenderizing.

Ingredients

  • 1/1/4 /1/4 pounds sirloin steak boneless
  • 1/2 /2 tsp salt
  • 2 tbsp olive oil
  • 5 garlic chopped, cloves
  • 1 white onion chopped
  • 2 bell pepper sliced
  • 4 peperoncini drained and sliced, from a jar
  • 15 ounces crushed tomatoes
  • 1/2 /2 tsp oregano dried
  • 1/2 /2 tsp basil dried
  • 1/8 /8 tsp red pepper flakes
  • 2 tbsp parsley chopped, fresh

Instructions

  1. Season the steak by rubbing each side with the salt.
  2. Add the olive oil to a sauté pan and sear the steak over high heat for 2 minutes on each side. Remove the steak from the pan and set aside.
  3.  Add the onions to the pan and cook over medium heat until translucent. 
  4. Add the bell pepper slices and cook for another 4 minutes.
  5.  Add the garlic and stir, cooking for one more minute. 
  6. Add the peperocini, crushed tomatoes, oregano, basil, 1 cup water and pepper flakes and stir together. 
  7. Add the steak back to the pan along with the sauce. Cover and cook for 20 minutes over low heat.
  8. Flip the steak in the pan and cook for another 15 minutes.
  9.  Serve over pasta, as a sandwich or alone garnished with parsley.

Notes

  • Using a slow cooker can yield extra tender steak by cooking it low and slow with the sauce.
  • Serve this dish over pasta, on sandwiches, or alongside some vegetables for a complete meal.
