Description

This version of Authentic Mexican Rice starts with toasting long grain white rice in neutral cooking oil until golden to develop a nutty aroma and firm texture. A smooth tomato puree consisting of vine-ripened tomatoes, white onion, garlic, jalapeño, and tomato sauce is prepared separately to infuse the rice with traditional Mexican flavors. Once the rice is toasted, the puree, chicken broth, and salt are combined and brought to a boil.

The cooking process then shifts to simmering with the pot covered to allow the rice to absorb the liquid and flavors, resulting in fluffy, tender grains. Once the rice is fully cooked, it rests covered off the heat to finish steaming evenly.   • 2 tomatoes vine ripened
  • 1 white onion
  • 4 cloves garlic
  • 1 jalapeño
  • 1/4 cup tomato sauce
  • 1/3 cup neutral cooking oil generic cooking oil
  • 2 cups long grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 lime for serving
  • 2 tablespoons cilantro for garnish, chopped, fresh

Instructions

  1. Place the tomatoes, onion, garlic, jalapeño, and tomato sauce in a blender and blend until smooth.
  2. Set a heavy bottomed pot over medium high heat, add in the oil and rice. Continue to cook, stirring frequently until the rice is golden and toasted.
  3. Add in the tomato puree, broth, and salt. Bring to a boil.
  4. Once boiling reduce the heat to low to maintain a simmer and cover. Cook 20 minutes then turn off the heat, let it sit for 10 minutes before uncovering. Garnish with cilantro and a squeeze of lime.
