Description
Avalanche Cookies blend white chocolate melting disks melted smoothly with creamy peanut butter and miniature marshmallows to create a sticky, rich base. Rice Krispies cereal and half the miniature chocolate chips are folded in to provide crispness and chocolate flavor throughout the mixture. Scooped onto parchment paper and topped with remaining chocolate chips, these cookies firm up as the chocolate sets.
This method produces a contrast of textures — the soft marshmallows melt into the chocolate-peanut butter base, while the Rice Krispies add light crunch. The final cookie balances sweetness from white chocolate and marshmallows with the peanut butter richness and pockets of dark chocolate chips.
The no-bake preparation requires only cooling time for the cookies to harden before serving. They make an easy treat for gatherings or busy days when baking isn’t an option.
Ingredients
- 2 cups white chocolate melting disks
- 1/2 cup peanut butter creamy
- 1 cup miniature marshmallows
- 3 cups Rice Krispies cereal
- 1 1/2 cups miniature chocolate chips
Instructions
- Melt the white chocolate in a large microwave safe bowl in 30 second increments until completely melted and smooth when stirred then add in the peanut butter and marshmallows and stir well until smooth then let cool for 2 minutes.
- Add in the rice krispies cereal and 1/2 cup of the chocolate chips and stir gently until combined then scoop with a 2 tablespoon measure onto a baking sheet lined with parchment paper and sprinkle remaining chocolate chips on top immediately and let harden completely before serving.
