This 5-minute avocado green goddess dressing is creamy, tangy, and full of fresh herbs! Made with Greek yogurt, lemon, and olive oil, it’s a healthy, mayo-free upgrade for salads, sandwiches, or dips.

Ingredients
- 1 large ripe avocado pitted
- ⅔ cup Greek yogurt whole milk, 2% or 0%
- 1 cup flat-leaf parsley packed
- ½ cup cilantro (use basil if you want this to be Italian-style
- ½ cup watercress or baby spinach
- 1 green onion sliced green + white parts
- 2 tablespoon chives chopped
- 3 - 4 tablespoon lemon juice 1 large or 2 medium lemons
- ½ teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 1 medium garlic clove roughly chopped or minced
- ¼ teaspoon salt more to taste
- ¼ teaspoon ground black pepper
- 2 - 5 tablespoon water to thin out the dressing

Instructions
- In a blender or food processor, combine the avocado, Greek yogurt, cilantro, parsley, spinach, lemon juice, olive oil, chives, garlic, Dijon mustard, green onion, salt, and pepper. Don't add the water yet.
- Process until smooth and creamy, scraping down the sides as needed to ensure all ingredients are well incorporated. Remember tiny flecks of herbs are totally okay!
- To make the dressing thinner: add 1 tablespoon of water at a time until you get the consistency you want! For reference, I added 3 tablespoon to mine.
- Taste and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice according to your preference.
- Serve chilled and drizzle over your favorite salads, roasted vegetables, or use as a dipping sauce for crudités or roasted potatoes. Store in an airtight container in the refrigerator for up to 6 days. Enjoy!

- Let it Rest. For the best-tasting dressing, allow it to rest in the refrigerator for at least 30 minutes or longer before serving. This resting time helps the flavors meld together and develop a more cohesive taste.

- Watercress Substitute: Arugula (also known as rocket) is the best substitute for watercress since it has a similar peppery taste. You can also use baby spinach, radish sprouts, or mizuna.
- Make it Vegan: You can make this green goddess dressing vegan and dairy-free by substituting the Greek yogurt with ¼ cup of runny tahini and ¼ cup of hummus. You can also use plain dairy-free yogurt (substitute it 1:1 with Greek yogurt).
