Avocado-Lime Slaw
Description
This slaw starts by pureeing mayonnaise, avocado, chopped cilantro, minced garlic, fresh lime juice, jalapeño, kosher salt, and black pepper to achieve a smooth, flavorful dressing. The creamy avocado and lime provide richness and bright acidity, while jalapeño adds mild heat.
The dressing is poured over a prepackaged slaw mix comprising shredded vegetables, which are thoroughly tossed to distribute the dressing evenly, delivering a crisp texture with a creamy tangy coating. The combination results in a refreshing side dish or topping suitable for a variety of meals.
The slaw can be served immediately or refrigerated covered for up to 24 hours. If the slaw mix includes a separate prepackaged dressing packet, it should be discarded or reserved for another use, as this recipe’s dressing replaces it. When using fresh cabbage, salting and rinsing before mixing enhances texture and flavor, and letting the slaw sit at room temperature briefly before serving improves taste integration.
For convenience without a food processor, the avocado may be mashed and other dressing ingredients stirred in manually. Pickled jalapeños may replace fresh ones for a milder, tangy heat, adjusting quantities accordingly.
Ingredients
- ½ cup mayonnaise
- 1 avocado pit and skin removed, sliced in half
- ½ cup cilantro roughly chopped
- 2 cloves garlic minced
- 3 tablespoon lime juice fresh
- 1 jalapeño seeded and finely chopped
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper freshly ground
- 12 oz slaw mix
Instructions
- In a food processor, add mayonnaise, avocado, cilantro, garlic, lime juice, jalapeno, salt, and pepper. Pulse until completely blended and smooth.
- Place the slaw mix in a large bowl and spoon the dressing over the top. Use two large spoons to toss the slaw until fully mixed.
- Serve at once, or cover and place in the fridge for up to 24 hours.
Notes
- A food processor or hand mixer can be used to blend the dressing smoothly.
- Mashing avocado and mixing other ingredients by hand takes about 3 to 4 minutes to achieve a smooth consistency.
- Pickled jalapeños provide a milder heat and can be substituted for fresh jalapeños; about 3 tablespoons chopped works well.
- The dressing enhances salads and sandwiches beyond slaw applications.
- Store dressing in an airtight container refrigerated up to one week.
- If using fresh cabbage, salt and rinse it before mixing to improve texture.
- Keep mixed slaw covered in the fridge and consume within 24 hours; add more lime juice and toss before serving if reheated to room temperature.
