Description
This Bacon Almond Brittle starts with cooking a syrup of sugar, corn syrup, water, and salt until bubbling and dissolved. Coarsely chopped raw almonds are stirred in and cooked further until the mixture turns golden, caramelizing the sugar around the nuts. Adding crumbled cooked thick-cut bacon introduces a smoky, salty note, balanced by the brown sugar and vanilla bean paste for sweetness and depth.
The inclusion of baking soda just before spreading the brittle on a buttered baking sheet causes it to foam, contributing to a lighter texture as it cools. After setting for about an hour, the brittle hardens into thin, crisp shards that easily break apart.
This sweet and savory treat can be prepared a few days ahead, making it great for gifting. Its combination of smoky bacon and sweet nuts is a distinctive flavor pairing that works well as a snack or party offering.
Ingredients
- 1 cup sugar
- 1/3 cup light corn syrup
- 2 tablespoons water
- 1/4 teaspoon salt
- 1 1/2 cups almonds coarsely chopped, raw
- 8 lices Bacon cooked and crumbled, thick-cut
- 1 tablespoon vanilla bean paste
- 1 teaspoon baking soda
Instructions
- Grease a baking sheet with softened butter generously.
- Add the sugar, corn syrup, water and salt to a saucepan over medium heat. Stir until the sugar dissolves and the mixture begins to bubble, about 2 to 3 minutes. Stir in the almonds and bring the sugar to a simmer/bubble, cooking until it is golden brown, about 3 more minutes. Stir in the bacon, vanilla bean paste and baking soda.
- Quickly spread the mixture on the baking sheet until it’s about 1/4-inch thick. Let cool completely, about an hour. Break into pieces/shards and serve or package for gifts! This can be made a few days ahead of time for gifting.
