Bacon and Watercress Pesto Sandwich
Description
The Bacon and Watercress Pesto Sandwich features a homemade pesto using fresh watercress, parmesan cheese, dry roasted cashews, and smoked salt blended with olive oil to create a vibrant, herbaceous spread. The smoky notes from frying streaky bacon complement the bright, slightly peppery pesto. Added grilled bell peppers and sun-dried tomatoes bring sweetness and depth, while sliced radishes and arugula add crunch and peppery freshness. Each sandwich is built on a soft roll with butter, layering the elements for a hearty, textured experience.
Frying the bacon until crisp and draining excess fat ensures a satisfying savory crunch without greasiness. The sandwich’s combination balances richness from the bacon and creaminess of the cheese with fresh, vegetal notes from the greens and vegetables, making it fit well for a midday meal or a satisfying snack.
Assemble right before serving to maintain the crispness of the vegetables and bacon. The pesto can be made ahead and stored refrigerated for several days, but assemble sandwiches fresh to keep bread from becoming soggy.
Ingredients
For the watercress pesto:
- 100 g (3.5oz) watercress
- 50 g (1.7oz) parmesan
- 50 g cashews dry roasted
- olive oil to taste
- smoked salt
- olive oil to taste
For the sandwich:
- butter
- 12 lices smoked streaky bacon I used spoiltpig’s
- 4 sandwich roll
- bell pepper grilled, a handful
- sun-dried tomato sliced, a handful
- radish sliced, a handful
- arugula arugula, a handful
Instructions
- Heat 1/2 tsp butter in a pan and fry the bacon until done, turning half way through. Drain on a paper towel and set aside.
- To make the pesto put the watercress, parmesan, cashew nuts and salt into a food processor and whiz into a paste. Transfer to a container and mix as much olive oil as you want.
- Assemble your sandwiches starting with the sandwich base, then pesto, bacon, peppers, sundried tomatoes, radishes, rocket and and sandwich top.
