Description
Bacon Carbonara Pasta involves cooking spaghetti slightly less than the package directions to maintain a firm texture, reserving some pasta water to adjust sauce consistency. Bacon is fried until crisp in a skillet, then removed while the pasta is tossed in the rendered bacon fat to absorb flavor.
A mixture of raw egg yolks, kosher salt, freshly ground black pepper, and shaved Parmesan cheese is whisked and added slowly to the hot pasta, which is tossed quickly to thicken into a creamy coating without scrambling. Adding some reserved pasta water and frozen peas creates a smooth sauce and introduces mild sweetness and texture.
The dish combines tender pasta, smoky bacon, and a creamy, cheesy sauce with the bright addition of peas. It's a classic take on carbonara with a touch of green vegetable and a balanced savory flavor.
Ingredients
- 1 pound spaghetti
- 10 lices Bacon , cut into small pieces
- 3 large egg yolks
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper coarse ground
- 1 cup parmesan , shaved
- 1 cup peas frozen
Instructions
- Cook the pasta in a large pot to one minute less than the directions on the box and keep 1/2 cup of pasta water to the side to drain pasta (do not rinse pasta).
- In a large skillet add the bacon and cook it until crisp then turn off the heat and remove the bacon with a slotted spoon then add the pasta and toss it in the bacon fat.
- Add the eggs, salt, pepper and Parmesan cheese to a large bowl and whisk well before adding slowly while tossing the hot pasta quickly to prevent it from scrambling.
- Add in 1/4 cup of the pasta water and peas, tossing again to create a saucy consistency to the pasta then topping with bacon before serving.
