This Keto Bacon Cheeseburger Casserole packs all the flavors of a classic Big Mac into a hearty, cheesy bake.

Ingredients
- 2 pounds ground beef I use 85% organic grass-fed
- ½ yellow onion diced
- 2 cups shredded cheddar cheese divided
- 12 ounces uncured bacon chopped
- 1 batch Keto Thousand Island Dressing
- ¾ cup heavy cream
- ½ cup dill pickles chopped
- 4 whole eggs beaten
- 4 cloves garlic minced
- 1 teaspoon smoked paprika
- 1 tablespoon Worcestershire
- Optional: Shredded lettuce, tomatoes and pickles
- 1 tablespoon yellow mustard
- ½ teaspoon salt
- ¼ teaspoon ground black pepper

Instructions
- Prepare the Thousand Island Dressing, also mixing in the smoked paprika. Set the dressing aside to allow the flavors to meld.
- Chop the bacon into small pieces and fry in a large skillet until crisp. Remove the bacon and most of the grease, leaving about 2 tablespoons in the skillet.
- Add in the mushrooms and onions, then sauté until tender. Remove and set aside.
- Preheat oven to 375°F.Add the ground beef into the skillet, salt and ground black pepper. Cook until browned, then add in the minced garlic and sauté for another 15 seconds, making sure not to brown it.
- Add the ground beef and sautéed garlic to a large mixing bowl along with the chopped pickles, half the shredded cheddar cheese, most of the cooked bacon (reserving some for garnish), sautéed mushrooms and onions.
- In a separate bowl, add in half the dressing, yellow mustard, eggs, worcestershire and heavy cream. Whisk until well combined, then pour over the ground beef mixture and mix until well combined.
- Pour into a 9 x 13 casserole baking dish that’s been sprayed with a nonstick spray. Top with the remaining shredded cheddar cheese and bake for 25-30 minutes or until cooked through.
- Serve as is or top with the remaining bacon and Thousand Island Dressing, as well as the toppings of your choice: shredded lettuce, pickles and/or tomatoes.
