Bacon Pistachio Crusted Scallops

Fresh scallops are coated in a crispy bacon, pistachio herb mixture and pan seared for a quick and simple, luxurious and flavorful meal.

Ingredients
- 8 strips bacon cooked & crumbled – reserve a small amount of bacon grease & set aside
- ¼ cup pistachios
- 1 tbsp green onions chopped
- 1 tbsp fresh Rosemary
- 1 tsp kosher salt
- 1 tsp black pepper
- 12-15 large scallops
Instructions
- Combine the bacon, pistachios, green onions and rosemary in a small food processor (or blender).
- Blend for 10-15 seconds, or until well combined.
- Place the mixture on a plate or in a shallow bowl.
- Sprinkle both sides of each scallop with salt and pepper.
- Coat each side of the scallop with the bacon pistachio mixture.
- Place a skillet with the bacon grease on the stove top over medium heat and add the scallops.
- Cook for 3-4 minutes per side.
