Bacon Wrapped Asparagus Recipe

Bacon Wrapped Asparagus pairs fresh asparagus spears bundled in smoky bacon strips then baked until the bacon is crisp and the asparagus tender. A brushed-on mixture of melted butter, garlic, coconut sugar, salt, and pepper adds a subtle sweetness and depth to the savory dish. This recipe creates a combination of savory, sweet, and lightly garlicky flavors with a pleasing contrast between crisp bacon and lightly cooked asparagus.

Description

This recipe starts by pre-cooking bacon on a wire rack to about halfway doneness, which helps render the fat and allows for easier wrapping. Bundles of 4-5 asparagus spears are then wrapped with partially cooked bacon strips and coated with a butter mixture flavored with garlic, coconut sugar, salt, and pepper. Baking continues until the asparagus reaches the desired tenderness and the bacon crisps further.

The texture contrasts between the snap of the asparagus and the crispy edges of the bacon make each bite satisfying. The butter mixture's slight sweetness balances the smoky pork and bright green vegetable flavor. The garlic adds aromatic depth without overpowering.

Serve as a side dish or appetizer, garnished with fresh parsley if desired. This makes a flavorful and appealing accompaniment to many meals.

Prep tips include making the bacon bundles ahead of time, refrigerating for up to 24 hours, and coating with sauce just before baking. Leftover bundles keep well refrigerated but freezing is not recommended due to texture changes. Reheating in an oven or air fryer preserves crispness best.

Ingredients

Servings
  • 2 lbs. asparagus ends trimmed
  • 8 lices Bacon thick or regular cut
  • 4 Tbsp. butter or dairy-free butter, melted
  • 1 clove garlic crushed
  • 1 Tbsp. coconut sugar
  • 1 tsp. salt to taste
  • ¼ tsp. black pepper to taste
  • parsley optional

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a large baking sheet with aluminum foil. Layer bacon strips on a wire rack and then place it on the lined baking sheet. Be careful not to let the strips overlap.
  3. Bake bacon in oven for 12-16 minutes, depending on thickness**, or until strips are more than halfway cooked. Let bacon cool slightly before handling and drain bacon grease from the pan.
  4. Wrap 4-5 pieces of asparagus in one strip of bacon. Place asparagus bundles back on the wire rack.
  5. In a small bowl whisk together the melted butter, garlic, sugar, salt, and pepper. Brush over asparagus bundles and bake for 15-20 minutes, or until asparagus is cooked to your desired doneness.
  6. Serve with a sprinkle of finely chopped fresh parsley and enjoy!

Notes

  • Assemble bacon wrapped asparagus bundles ahead and refrigerate sealed up to 24 hours before baking.
  • Apply the butter-garlic-sugar seasoning just before baking for best flavor and texture.
  • Store leftovers in an airtight container refrigerated for 3-4 days.
  • Do not freeze, as freezing affects texture negatively.
  • Reheat in a 350°F oven or air fryer to restore bacon crispness.
