Bacon-Wrapped Chicken Thighs

Ingredients

  • 1 tablespoon poultry seasoning
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 3/4 teaspoon salt sea salt
  • 8 large chicken thighs boneless, skinless
  • 8 lices streaky bacon
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, mix together the poultry seasoning, garlic powder, onion powder and sea salt. Sprinkle it all over both sides of the chicken.
  3. Wrap one slice of bacon around each thigh. You can secure with a toothpick if easier.
  4. Heat the oil in a large pan on high heat. Place the thighs in and cook until golden brown, 2 to 3 minutes. Flip and repeat. If your pan is small you might have to do this in two batches, as you don't want to crowd the chicken.
  5. Once browned, place the chicken in a baking dish and bake until a meat thermometer inserted into the meat reads 165°F, about 20 to 25 minutes.
  6. Once cooked, turn your oven to broil on high and adjust the oven rack to the top tier. Cook the chicken for another minute or two until the bacon is crispy.
