Bagels with Smoked Salmon and Herbed Avocado Spread

For the spread:

  • 1 avocado ripe, California, seeded, peeled, sliced, at room temperature
  • 3 ounces cream cheese at room temperature
  • 1 tablespoon lemon juice fresh
  • kosher salt
  • 1 1/2 tablespoons chives finely sliced
  • 1 1/2 tablespoons dill chopped
  • black pepper freshly ground

For the bagels:

  • bagel plain and/or everything, cut in half and toasted
  • smoked salmon or lox
  • red onion thinly sliced
  • capers
  • dill fresh
  • lemon wedges

Instructions

  1. To make the Herbed Avocado Spread, add sliced avocado, cream cheese, lemon juice and 3/4 teaspoon salt in a small food processor, pulsing several times to combine. Add chives, dill and several turns of black pepper, then blitz until well-combined. The mixture won’t be completely smooth. Season to taste with additional salt and pepper.
  2. To serve, schmear bagels with Herbed Avocado Spread. Top will smoked salmon, sliced red onion, capers and dill to taste. Serve lemon wedges on the side.
