Description
The dish begins by gently sautéing onions and minced garlic in canola oil until softened, releasing aromatic base flavors. Ground beef is then browned in the pan and seasoned with fish sauce, which imparts an umami richness. After adding water, the mixture simmers covered to cook the beef fully and concentrate flavors as excess liquid evaporates.
Calamansi juice and chopped Thai chili peppers are incorporated near the end of cooking, infusing the dish with a sharp citrus tang and moderate heat. Salt seasoning adjusts taste to preference. The final result is tender, flavorful ground beef with a sauce that is slightly thick and aromatic. Bagis is served hot and can be accompanied by rice or enjoyed as a flavorful main dish.
Calamansi may be substituted by combining lemon and orange juices to mimic its unique tart and sweet balance where unavailable.
Ingredients
- 1 tablespoon canola oil
- 1 onion peeled and chopped
- 4 cloves garlic peeled and minced
- 1 pound ground beef
- 1 tablespoon fish sauce
- 1 cup water
- 5 Thai chili peppers large, stemmed and chopped
- ½ cup calamansi juice
- salt to taste
Instructions
- In a pan over medium heat, heat oil. Add onions and garlic and cook until softened.
- Add ground beef and cook, breaking apart with the back of a spoon, until lightly browned.
- Add fish sauce and allow to cook for about 1 to 2 minutes.
- Add water and bring to a boil.
- Lower heat, cover and simmer for about 15 to 20 minutes or until beef is tender and liquid is mostly absorbed.
- Add calamansi juice and chili peppers, stirring to combine.
- Cover and continue to simmer for about 3 to 5 minutes or until meat is completely cooked and liquid is mostly dry.
- Season with salt to taste. Serve hot
Notes
- If fresh calamansi juice isn't available, substitute with a mix of lemon and orange juice to replicate its tart and slightly sweet flavor.
