Baileys Frozen Mochaccino is a chilled dessert combining brew-style coffee, unsweetened chocolate chips melted into a sugar and coffee syrup, then blended with Baileys Irish Cream and folded into whipped heavy cream. Once frozen overnight, it sets into a creamy, mousse-like texture that carries the deep coffee flavor enhanced with chocolate and the distinctive warmth of Baileys. The method requires gentle folding to preserve the whipped cream's airiness.

Its chilled consistency and flavor make it suitable as a dessert or an adult treat served after a meal. Freezing it in an airtight container preserves freshness for up to two weeks, and letting it thaw 15 to 20 minutes before serving softens the texture for easier enjoyment. Additional whipped cream can be added on top for extra richness.

Ingredients

  • ½ cup granulated sugar
  • ¼ cup coffee really strong brewed, espresso used
  • ¼ cup water
  • 1 cup chocolate chips unsweetened, mini
  • 2 tablespoons baileys
  • cups heavy cream whipping, whole or heavy, at least 30% fat content

Instructions

  1. In a small pot add sugar, coffee and water bring to a boil and continue at a slow boil for approximately 2 minutes.
  2. Remove from the heat. Add the chocolate chips, stir until melted and smooth, let cool to room temperature then add the Baileys or you can add the Baileys with the chocolate chips, pour the mixture into a blender and blend for approximately 2-3 minutes. 
  3. In a medium bowl beat whipping cream until stiff, fold in the cooled chocolate mixture. Pour into individual serving bowls. Cover with plastic wrap (make sure the plastic touches the top of the chocolate mixture). Freeze for at least 8 hours or over-night. Let sit 15-20 minutes before serving. Top with additional whipped cream if desired before serving. Enjoy!
