Description

This recipe builds two layers of gelatin: first, a coffee layer sweetened and set with unflavored gelatin, followed by a creamy Baileys Irish Cream layer thickened similarly. The coffee layer is gently pierced to help the subsequent Baileys gelatin layer adhere evenly. After chilling, the combined gelatin is firm enough to cut into bite-sized squares, each offering a subtle coffee flavor balanced by the sweet Irish cream. Whipped cream and chocolate sprinkles finish the presentation, adding richness and visual appeal.

The process requires chilling each layer separately to ensure distinct layers without blending. This dessert is served cold and works well as an adult party treat where a balance of coffee and cream flavors is appreciated.

  • 750 ml Bailey's Irish Cream Liqueur 1 bottle
  • 2 cups coffee or espresso, hot
  • 5 packets gelatin divided, unflavored
  • 4 tablespoons granulated sugar white
  • 1 teaspoon vanilla extract

Garnish:

  • Whipped Cream
  • chocolate sprinkles

Instructions

  1. Line a 9X9 inch baking dish with plastic wrap.
  2. Add the hot coffee and sugar to a medium bowl, whisk to dissolve the sugar.
  3. Add 2 packets of gelatin mixture and whisk to make sure there are no clumps.
  4. Stir in the vanilla extract.
  5. Pour the coffee mixture into the prepared pan and refrigerate for at least 1 hour, or until firm.
  6. Using a wooden skewer poke holes in the surface of the coffee gelatin layer.
  7. Heat 1 cup of Baileys Irish Cream in a microwave-safe bowl until it almost simmers, then whisk in 3 packets of unflavored gelatin, until dissolved, and making sure there are no clumps.
  8. Whisk in the remaining Baileys into the mixture and pour the mixture over the coffee gelatin layer. Refrigerate for at least 2 hours, or until completely firm.
  9. To cut and serve, gently lift the entire sheet of gelatin out of the pan using the edges of the plastic wrap.
  10. Cut into 36 smaller or 24 larger squares. Top with small dollops of whipped cream and garnish with chocolate sprinkles on some and shaved chocolate.
  11. Refrigerate until ready to serve.
