Baked Apple Cider Chicken and Cabbage

Baked Apple Cider Chicken and Cabbage features skinless, bone-in chicken legs marinated in apple cider, apple cider vinegar, fresh herbs, and garlic. The chicken is baked alongside sliced red cabbage and Granny Smith apples, creating a dish with tender meat and softened vegetables accented by a brush of Dijon mustard. The interplay of tangy cider, aromatic herbs, and sweet-tart apples develops during marination and baking for a balanced autumnal meal.

Description

This recipe begins by marinating chicken legs in a mixture of apple cider, apple cider vinegar, olive oil, garlic, fresh thyme, rosemary, salt, and pepper for at least four hours to infuse flavor and tenderize the meat. After marinating, the chicken and marinade are transferred to a baking dish, with red cabbage wedges and apple slices arranged around the chicken.

Baking at 400°F first for 30 minutes, then turning the chicken and brushing it with Dijon mustard before finishing for about 35 minutes, ensures even cooking and a concentrated flavor glaze. The cabbage and apples roast until tender, absorbing the savory and tangy marinade flavors. The interplay of sweet apples and sharp vinegar complements the herbs and mustard, enriching the overall dish.

Garnishing with parsley adds a fresh note to the warm, hearty meal, which highlights the combination of fruit, vegetables, and chicken in a single dish, suitable for fall or winter dinners.
