Description

Pieces of peeled and sliced apples are tossed with lemon zest and juice, brown sugar, cinnamon, nutmeg, and dried cranberries to add tartness and depth to the filling. The mixture is placed in a baking dish and topped with a crumble made from chilled butter, flour, brown sugar, rolled oats, shredded sharp white cheddar cheese, and chopped pecans. FOR BAKED APPLE CRISP:

  • 6 medium apple I used a combination of granny smith and gala, peeled & sliced
  • ½ teaspoon lemon zest
  • 2 teaspoons lemon juice zested and juiced
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup dried cranberries

FOR EASY CRUMBLE TOPPING:

  • 4 tablespoons butter well chilled, cut into small cubes, unsalted
  • ½ cup flour
  • ½ cup brown sugar packed
  • ½ cup rolled oats you can use the quick cooking or the old fashioned
  • ½ cup cheddar cheese I used white cheddar, shredded, sharp
  • ½ cup pecans roughly chopped

Instructions

  1. Preheat the oven to 375℉. Spray an 8x8 inch casserole dish with vegetable spray and set aside.

FOR EASY CRUMBLE TOPPING

  1. In a medium bowl, combine cold butter, flour, brown sugar and oatmeal. Work with your hands to combine until crumbly. Add cheddar cheese and  pecans. Work the mixture with your fingers to combine ingredients evenly. Set aside.

FOR APPLE CRANBERRY CRISP:

  1. In a large bowl, combine the apples, lemon juice, lemon zest, brown sugar, cinnamon and nutmeg. Toss until fruit is evenly coated. Add the dried cranberries and toss to combine.Set aside.
  2. Transfer apple mixture to the baking dish.  A syrup will have formed in the apples, that's really good -- so drizzle it over the apples. Generously distribute the easy crumble topping over the apples.
  3. Bake for 30 minutes or until apples are bubbling and streusel is golden. Remove from oven and cool for 10 minutes before serving.

SERVE WITH:

  1. This apple cranberry crisp is delicious on its own, but try it with a bit of half and half or cream drizzled over the top for a rustic presentation. A dollop of rum-spiked whipped cream or scoop of vanilla are also crowd pleasers.

Notes

  • Store leftovers covered in the refrigerator for up to 5 days to maintain freshness.
  • Reheat the apple crisp uncovered in a 350°F oven for 10-15 minutes to crisp the topping again before serving.
