Ingredients
- 2 medium apples peeled, cored, and chopped
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 large eggs
- ½ cup milk
- ¼ cup brown sugar packed
- 1 teaspoon vanilla extract
- 2 tablespoon unsalted butter melted
- 1 tablespoon lemon juice
For the glaze:
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon optional for extra flavor
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a muffin tin or a donut pan.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs, then add milk, brown sugar, melted butter, vanilla extract, and lemon juice. Stir until smooth.
- Gradually combine the wet ingredients with the dry ingredients, mixing until just incorporated. Fold in the chopped apples.
- Spoon the batter evenly into the muffin or donut pan, filling each slot about ⅔ full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- While the fritters are baking, prepare the glaze by whisking together powdered sugar, milk, vanilla, and cinnamon (if using).
- Let the fritters cool for a few minutes, then drizzle the glaze over the warm fritters.
- Serve immediately and enjoy!
Notes
- You can use any variety of apple for this recipe, though tart apples like Granny Smith work especially well.
- If you prefer a crispier texture, you can lightly fry the fritters instead of baking them.
- For added flavor, sprinkle cinnamon sugar over the fritters while they’re still warm, before glazing.
- These fritters are best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
- To make a dairy-free version, substitute the butter with coconut oil and use a plant-based milk.
- You can freeze the fritters for up to 1 month, and reheat them in the oven at 300°F for a few minutes.
- For a healthier glaze, substitute powdered sugar with maple syrup or honey for a more natural sweetness.
- Serve these fritters with a cup of coffee or tea for the perfect breakfast or snack.
