Ingredients
For the Apple Fritters
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ¼ cup milk
- 3 cups diced apples (about 2¼ apples)
- 1 teaspoon cinnamon
- ¼ teaspoon kosher salt
- 2 large eggs
- 3 tablespoons brown sugar
- 1 teaspoon pure vanilla extract
- vegetable oil for frying
For the Glaze
- 1½ cups powdered sugar
- 1 teaspoon lemon juice
- 1 tablespoon water
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
- In a medium bowl, combine the eggs, sugar, and vanilla.
- Add the egg mixture to the flour mixture, stirring until smooth. Follow with milk and stir to combine.
- Fold in the apples, just until covered. Don't overmix.
- Fill a Dutch oven with at least 2 inches of vegetable oil and heat over medium-high until it reaches 350°F.
- Using a tablespoon or a cookie scoop, dollop the batter into the oil, cooking 3-4 fritters at a time. Cook the fritters, turning them over, about 2 minutes per side, until deep golden brown.
- Remove fritters from the oil with the spider tool and place on a tray lined with paper towels.
- Make the glaze by combining powdered sugar, water, and lemon juice. Dip the fritters in the glaze.
Notes
- Storage: Store apple fritters in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days.
- To make these fritters even more autumnal, sprinkle some cinnamon and nutmeg in the icing!
- Double-check the temperature of your oil before you fry the fritters. If it's too hot, the outside of the fritters will fry quickly and the insides will be uncooked. Not hot enough, and the fritters will be greasy and undercooked throughout.
- Use freshly squeezed lemon juice for this recipe, not the bottled stuff!
