Ingredients

Servings
  • 2 apple peeled, cored, and chopped, medium
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 egg large
  • ½ cup milk
  • ¼ cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 tablespoon butter melted, unsalted
  • 1 tablespoon lemon juice

For the glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon optional for extra flavor

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a muffin tin or a donut pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs, then add milk, brown sugar, melted butter, vanilla extract, and lemon juice. Stir until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients, mixing until just incorporated. Fold in the chopped apples.
  5. Spoon the batter evenly into the muffin or donut pan, filling each slot about ⅔ full.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. While the fritters are baking, prepare the glaze by whisking together powdered sugar, milk, vanilla, and cinnamon (if using).
  8. Let the fritters cool for a few minutes, then drizzle the glaze over the warm fritters.
  9. Serve immediately and enjoy!

Notes

  • You can use any variety of apple for this recipe, though tart apples like Granny Smith work especially well.
  • If you prefer a crispier texture, you can lightly fry the fritters instead of baking them.
  • For added flavor, sprinkle cinnamon sugar over the fritters while they’re still warm, before glazing.
  • These fritters are best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
  • To make a dairy-free version, substitute the butter with coconut oil and use a plant-based milk.
  • You can freeze the fritters for up to 1 month, and reheat them in the oven at 300°F for a few minutes.
  • For a healthier glaze, substitute powdered sugar with maple syrup or honey for a more natural sweetness.
  • Serve these fritters with a cup of coffee or tea for the perfect breakfast or snack.
