Ingredients
- 5 apple any type, small
For the granola crunch:
- 1/3 cup oats (use gluten-free if needed)
- 1 pinch salt
- 1 teaspoon ground cinnamon
- ground ginger pinch of ground cardamom, pinch of ground nutmeg and ground cloves, optional, 1/4 teaspoon
- 2 tablespoons light brown sugar
- 2 tablespoons hazelnut toasted and skinned, finely chopped
- 1 tablespoon flax seeds
- 1 tablespoon quinoa
- 1 tablespoon neutral cooking oil or melted butter, generic cooking oil
- OR:
- Use your favorite granola to replace the above mixture
Notes
- These baked apples are best eaten right away, although the oat mixture may be well done ahead of time.
- Once baked, the apples can stay in your fridge for about 5 days. You can enjoy them cold or reheat them in the oven before serving.
- For a decadent twist on this healthy holiday dessert, brush a bit of melted butter on them before baking and serve the baked apples with a nice tiny little scoop of vanilla ice cream while they’re still warm. It's the holidays after all!
