Ingredients
- 1 wedge brie
- Baguette slices (to serve)
Apple Cherry Compote
- 2 tablespoons olive oil
- 1 small onion (diced)
- 1 clove garlic (minced)
- 2 sprigs fresh thyme (optional)
- salt and pepper (to taste)
- 1 apple (cored and diced)
- ½ cup water
- ¼ cup dried cherries
- 2 tablespoons honey
- 1 tablespoon whole grain mustard

Instructions
- Pre-heat oven to 350 degrees and place brie in a baking dish; set aside.
- While oven is pre-heating, begin making the compote. To start, heat a small sauce pot over medium-high heat and drizzle with olive oil. Add in the onions, garlic, and pinch of salt and pepper. Sauté until onions become translucent, about 6-7 minutes. If you have a couple sprigs of fresh thyme, toss them in now.
- To the pan, add in the remaining ingredients (diced apple through whole grain mustard) and stir well. Bring mixture to a boil then reduce to simmer. Cook down until apples become tender and cherries begin to plump up, about 15-20 minutes.
- Pour apple cherry compote on top of brie then bake until brie begins to melt, about 10-12 minutes. Serve with baguette slices.
