Ingredients
Cranberry-Raspberry Balsamic Compote:
- 1 cup fresh cranberries
- 1 cup fresh raspberries
- ½ cup sugar
- 2 tbsp water
- ⅓ cup balsamic vinegar
Crostini with Brie
- 1 small baguette, thinly sliced
- olive oil
- 1 wedge of brie, sliced
Instructions
Cranberry-Raspberry Balsamic Compote:
- Make the cranberry-raspberry balsamic compote by combining the fresh cranberries and raspberries with sugar and water in a small saucepan over medium heat.
- Cook, stirring occasionally, until the cranberries pop, about 10-15 minutes.
- Add the balsamic vinegar and continue to cook, stirring occasionally, for 5-10 minutes, or until thickened. Set aside to cool.
Crostini with Brie:
- Preheat the oven to 350 degrees.
- Make the crostini by brushing the baguette slices with a bit of olive oil and place them on a baking tray. Bake for 5-7 minutes, or until lightly toasted.
- To assemble, place a slice of brie on a crostini them top with a dollop of the cranberry-raspberry balsamic compote.
- Serve immediately with extra compote on the side.
