Cranberry-Raspberry Balsamic Compote:

  • 1 cup fresh cranberries
  • 1 cup fresh raspberries
  • ½ cup sugar
  • 2 tbsp water
  • cup balsamic vinegar

Crostini with Brie

  • 1 small baguette, thinly sliced
  • olive oil
  • 1 wedge of brie, sliced

Instructions

Cranberry-Raspberry Balsamic Compote:

  1. Make the cranberry-raspberry balsamic compote by combining the fresh cranberries and raspberries with sugar and water in a small saucepan over medium heat.
  2. Cook, stirring occasionally, until the cranberries pop, about 10-15 minutes.
  3. Add the balsamic vinegar and continue to cook, stirring occasionally, for 5-10 minutes, or until thickened. Set aside to cool.

Crostini with Brie:

  1. Preheat the oven to 350 degrees.
  2. Make the crostini by brushing the baguette slices with a bit of olive oil and place them on a baking tray. Bake for 5-7 minutes, or until lightly toasted. 
  3. To assemble, place a slice of brie on a crostini them top with a dollop of the cranberry-raspberry balsamic compote.
  4. Serve immediately with extra compote on the side.
