Instructions

  1. Preheat oven to 350ºF/170ºC.
  2. Place the brie wheel in the middle of a large round baking dish or pie tin.
  3. Use a sharp knife to stab several slits in the brie. Push a few leaves of rosemary into each slit.
  4. Place a strip of bacon on the chopping board. Place a sausage on the end of the bacon along with a couple of rosemary leaves. Then roll the bacon tightly around the sausage. (see the bulk of post for pictures)
  5. Cut any remaining bacon off, secure the end with a toothpick or cocktail stick, and place it into the baking dish around the brie.
  6. Repeat with your remaining sausages.
  7. When you are ready to cook, glaze the bacon and brie with 2 tablespoons of honey. (if your sausages are bigger you might need an extra tablespoon of honey)
  8. Bake the brie and bacon-wrapped sausages for 25 to 30 minutes until the sausages are fully cooked, the bacon is crispy, and the cheese is molten.
  9. Remove the cocktail sticks before serving or warn your guests!

Notes

  • I use a 8oz(250g) wheel of brie, but you can use whatever size you like here.
  • Depending on the size of your bacon strips, you might get two sausages out of every strip of bacon.
