Description
Baked Broccoli Tater Tots begin with briefly boiling or steaming fresh or frozen broccoli to soften slightly before cooling and finely chopping. This is mixed with a large egg, diced onion, shredded Swiss and Parmesan cheeses, bread crumbs, and chopped Italian parsley, oregano, salt, and black pepper for seasoning. The mixture is formed into small log-shaped tots and arranged on a parchment-lined, greased baking sheet.
The tots bake in a 400°F (200°C) oven for about 20 to 25 minutes, turning halfway to brown evenly. The result is a tender interior with a mildly crispy exterior. They make a flavorful side or snack alternative that incorporates vegetables and cheese to create a comforting texture.
Substitutions for cheese are possible, with options such as cheddar, mozzarella, or gruyere depending on preference. Ingredients
- 2 cups broccoli florets fresh or frozen
- 1 large egg large
- ¼ onion diced
- ⅓ cup swiss cheese shredded
- ⅓ cup Parmesan Cheese freshly grated
- ⅔ cup bread crumbs
- 1 tablespoon Italian parsley chopped, fresh
- ½ teaspoon oregano
- ½ teaspoon salt
- 1-2 dashes black pepper
Instructions
- Pre-heat oven to 400° (200° celsius), cover a baking sheet with parchment paper and lightly grease.
- Boil for only 1 minute the broccoli florets, remove them from the water and rinse under cold water, chop finely.
- In a large bowl combine, the chopped broccoli, and the remaining ingredients, gently stir with a wooden spoon or spatula to combine well.
- Using a large spoon (soup spoon) measure out some of the mixture into your hand and shape into a the form of a log, place them on the prepared baking sheet and bake for approximately 20-25 minutes, turn the tots halfway through baking. Serve immediately. Enjoy!
Notes
- Cauliflower can be substituted for broccoli to vary the vegetable base.
- Swiss cheese may be replaced with cheddar, fontina, firm mozzarella, or gruyere for different flavors.
- Store any leftovers in an airtight container in the fridge for up to three days and reheat in a microwave or oven.
- The tots freeze well, either baked or unbaked; freeze unbaked tots on a tray until firm, then transfer to a container for up to three months.
