Baked Broccoli Tater Tots

These baked tater tots use broccoli as the main vegetable combined with eggs, diced onion, shredded Swiss and Parmesan cheeses, and breadcrumbs for binding. Seasoned with herbs like Italian parsley, oregano, salt, and pepper, the mixture is shaped into logs and baked until golden and cooked through, making a savory, tender, and lightly crisp bite. They offer a vegetable-forward twist on classic tater tots, simpler to prepare without frying.

Description

Baked Broccoli Tater Tots begin with briefly boiling or steaming fresh or frozen broccoli to soften slightly before cooling and finely chopping. This is mixed with a large egg, diced onion, shredded Swiss and Parmesan cheeses, bread crumbs, and chopped Italian parsley, oregano, salt, and black pepper for seasoning. The mixture is formed into small log-shaped tots and arranged on a parchment-lined, greased baking sheet.

The tots bake in a 400°F (200°C) oven for about 20 to 25 minutes, turning halfway to brown evenly. The result is a tender interior with a mildly crispy exterior. They make a flavorful side or snack alternative that incorporates vegetables and cheese to create a comforting texture.

Substitutions for cheese are possible, with options such as cheddar, mozzarella, or gruyere depending on preference. Leftovers store well refrigerated for up to three days and reheat without losing quality. They can also be frozen either before or after baking, making them convenient to prepare in advance.
