Baked Cauliflower Wings

Baked cauliflower wings are a tasty vegan or vegetarian alternative to chicken wings. They have a crispy coating full of herbs and spices.

Ingredients

  • 1 head of cauliflower
  • ½ cup (120ml) milk or vegan milk
  • ½ cup (120ml) water
  • 1 cup (150g) all-purpose flour (plain flour)
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • salt and pepper

For the garlic and herb dip

  • ½ cup (100g) soft cream cheese or vegan version
  • cup (75g) plain yogurt or vegan version
  • clove of garlic minced
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon fresh thyme chopped
  • large squeeze of lemon juice
  • ¼ teaspoon pepper
  • pinch of sea salt

Instructions

  1. Preheat the oven to 425°F/220°C and line 2 x baking sheets with baking parchment.
  2. Cut the cauliflower into florets and set aside.
  3. Mix all remaining ingredients in a large bowl. Dip each floret into the mix and coat well. Shake off the excess and place onto a baking tray. Repeat, taking care not to overcrowd the cauliflower on the baking tray and don’t pour any excess batter over the ‘wings’.
  4. Bake for 15 minutes, then turn each floret and bake for a further 5-10 minutes or until crispy and golden.
  5. Meanwhile, make the herb dip, by mixing all ingredients together until smooth.
