Baked Chicken Chimichangas
Description
This recipe starts with large burrito-size flour tortillas spread with refried beans and an optional layer of guacamole. Shredded cooked chicken and shredded cheese, such as cheddar and Monterey Jack, are layered on before rolling the tortillas tightly into burritos. They are placed on a greased baking sheet, generously coated with cooking spray or oil to encourage crisping, then baked at 425°F until the tortillas develop a browned, crisp exterior.
Baking creates a chimichanga with a crunchy outside and a warm, gooey interior of beans, cheese, and chicken. The addition of guacamole inside and optionally on the side adds creaminess and a fresh avocado flavor. Salsa served on the side complements the savory filling with bright acidity.
Beans in the recipe can be substituted with black or pinto beans according to preference. These baked chimichangas make a convenient, oven-based alternative to fried versions while preserving much of the texture and flavor.
Ingredients
- 4 large flour tortillas burrito-size
- ½ cup refried beans
- 1 cup guacamole (optional, but highly recommended!)
- 2 cups chicken see recipe below for the easy slow cooker chicken I used!, shredded
- 1 cup cheese cheddar, monterey, jack cheese, use your favorite!, shredded Mexican style
- cooking oil or cooking spray

Instructions
- Preheat oven to 425 and grease a baking sheet.
- Lay your tortillas out on a flat surface. Spread refried beans in the middle of each tortilla. Spread guacamole on top of the beans. Add shredded chicken, then shredded cheese. Roll into a burrito.
- Place burritos on prepared baking sheet. Spray generously with cooking spray, OR brush with oil. Bake for 15-20 minutes until the tortillas are browned and crispy. Serve warm with additional guacamole and salsa if desired.
Notes
- Refried beans can be replaced with black or pinto beans for variation.
