Baked Chicken Oatmeal Meatballs
Description
Baked Chicken Oatmeal Meatballs use ground chicken blended with milk, quick oats, finely diced onion, mayonnaise, egg, and seasoning to create moist, flavorful meatballs. Allowing the mixture to rest before baking helps absorb the liquid and develop seasoning throughout. Baking at 375°F for about half an hour produces meatballs with a slightly crisp exterior and tender interior, safely cooked to 165°F internally. The addition of quick oats adds texture and helps bind the mixture without overpowering the mild chicken flavor.
These meatballs can be enjoyed as a main dish alongside vegetables or a salad, or as an appetizer with dipping sauces. They adapt well to different meal occasions due to their balanced texture and flavor.
Ingredients
- 1 lb ground chicken
- 1/2 cup milk
- 1/2 cup quick oats
- 1 egg
- 1/2 onion finely diced, large
- 1 tbsp mayonnaise
- 1 tbsp salt adjust to taste
- 1 tsp black pepper adjust to taste
Instructions
- In a large bowl, knead all the ingredients together. Let them sit for about 30 minutes so the flavors can meld together.
- Preheat the oven to 375°F. Using a large ice cream scoop, portion and shape the meatballs. Place them on a baking sheet lined with parchment paper.
- Bake the meatballs for about 30 minutes, or until browned on the outside and the internal temperature has reached 165°F.
