Baked Chicken Parmesan Meatballs
Description
This recipe mixes ground chicken with eggs, breadcrumbs, fresh Italian parsley, Parmesan, shredded mozzarella, minced garlic, and dried herbs including oregano, basil, and red pepper flakes. Salt and black pepper balance the seasoning. The mixture is formed into large ball-shaped meatballs, approximately two inches in diameter, ensuring substantial portions and even cooking.
After baking meatballs uncovered at 425°F for 20 minutes, marinara sauce is poured over them followed by additional mozzarella cheese before returning to the oven. This second bake melts the cheese and allows the sauce to warm through the meatballs, adding moisture and rich flavor.
The finished meatballs pair well with pasta for a traditional meal, can be served in sandwiches, or enjoyed informally with rustic Italian bread. Parsley and extra grated Parmesan may be sprinkled on top for garnish and added flavor.
Ingredients
Meatballs
- 2 lbs. ground chicken regular, not extra lean
- 2 egg
- 1/2 cup breadcrumbs Italian-style OR panko (both work well)
- 1/2 cup Italian parsley chopped, fresh
- 1/2 cup Parmesan Cheese grated
- 1 cup mozzarella cheese shredded
- 5 garlic minced, cloves
- 1 tsp. oregano dried
- 1/2 tsp. basil dried
- 1 tsp. salt
- 1/4 tsp. red pepper flakes
- black pepper to taste
Sauce & cheese
- 2.5 cups marinara sauce OR 25 oz. jar of store-bought, homemade
- 2 cups mozzarella cheese shredded
- parsley optional, chopped, for garnish
- Parmesan Cheese optional, grated, for garnish
Instructions
- Preheat the oven to 425°. Combine all of the meatball ingredients together and make sure everything is fully incorporated.
- Roll the meatballs into large balls (approximately 2-inch diameter) and place in cast iron pan or a casserole dish that has been sprayed with non-stick cooking spray. This recipe makes 15 large meatballs.
- Bake the meatballs for 20 minutes and remove from oven. Pour all of the marinara sauce over the meatballs and top with the 2-cups of mozzarella cheese. Bake for another 10 minutes or so or until the cheese is nicely melted.
- Great served over pasta, in meatball subs, or rustic-style with a loaf of Italian bread! Enjoy!
