  • 3 pounds chicken thighs about 6-8, skin on, bone in
  • 2 Tablespoons olive oil

Rub

  • 1 teaspoon salt sea salt
  • ½ teaspoon black pepper ground
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¼ teaspoon chili powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with foil for easy clean up. Set aside.
  2. In a small bowl combine all the rub ingredients. Set aside.
  3. Pat chicken thighs dry with a paper towel. Place on the prepared baking sheet. Drizzle thighs with olive oil, rubbing the oil into the chicken to coat.
  4. Sprinkle rub mixture evenly over the chicken thighs. Turn the thighs over and evenly sprinkle remaining seasoning mixture on top. Make sure chicken thighs are skin-side up.
  5. Place the baking sheet in a preheated oven at 400 degrees Fahrenheit for 35-45 minutes or until the internal temperature is 165 degrees Fahrenheit.
