Baked Chicken with Cherry Tomatoes
Description
This recipe involves slicing boneless, skinless chicken breasts into fillets to ensure even and quick cooking. The chicken is rubbed with olive oil and a seasoning blend including brown sugar, paprika, herbes de Provence, salt, and pepper, which adds a sweet-spicy and aromatic dimension to the surface. Separately, cherry tomatoes are tossed with olive oil, herbs, salt, and sugar and spread in a roasting dish.
Baking at 450°F allows the chicken to roast through while the tomatoes soften, blister, and release their juices, mingling flavors. The combination delivers juicy chicken with a tender interior and a slightly caramelized exterior paired with sweet and herby tomato bites. This method preserves moisture and intensifies flavor with minimal hands-on cooking.
The dish is complete as a simple, satisfying main course, suitable for serving with grains, salads, or crusty bread. It emphasizes straightforward roasting techniques with fresh herbs and balanced seasoning to create flavor and texture variation.
