Description
The Baked Egg Tortilla uses a large flour tortilla pressed into a baking dish as the crust, layered with spinach, then filled with a whisked mixture of eggs combined with chopped vegetables and grated cheddar and crumbled feta cheeses. Baking at 200°C (400°F) for about 20-25 minutes cooks the eggs set while the cheese melts and the tortilla crisps slightly along the edges.
Chopped vegetables add freshness and texture while the combination of cheddar and feta brings both creamy and tangy notes. The spinach layer beneath helps keep the tortilla crisp bottom and contributes mild bitterness that balances the richness. Chopped chives sprinkled on the finished dish add a mild onion aroma.
This tortilla quiche works well sliced into wedges for serving at breakfast or brunch. It can be a satisfying vegetarian-friendly dish and is flexible enough to customize by adding other vegetables or mild spices.

Ingredients
- 1 flour tortilla large
- 4 egg whisked
- 30 g spinach chopped
- 6 cherry tomato halved
- 8 olive halved
- 2 spring onions sliced, aka scallions
- 0.25 red bell pepper diced
- 40 g cheddar cheese mature; grated
- 20 g feta cheese crumbled
- chives to serve
Instructions
- Carefully press 1 Flour tortilla into the baking dish.
- Add 30 g Spinach to the bottom.
- Whisk 4 Eggs and add 6 Cherry tomatoes, 8 Olives, 2 Spring onions (Scallions)0.25 Red bell pepper, 40 g Cheddar cheese and about ¾ of 20 g Feta. Mix well.
- Pour the egg and veg mixture over the spinach. Top with the remaining feta.
- Bake at 200°C/180°C(fan)/400°F/Gas 6 for 20-25 minutes. Serve topped with chopped Chives.
Notes
- Do not overfill the tortilla since the egg mixture rises during baking.
- Leave some space at the top of the tortilla to prevent spillover.
- Add red chili flakes or diced jalapeños if a spicy kick is desired.
- Double up two flour tortillas for a thicker, more substantial crust.
- Spinach can be layered under the tortilla or mixed into the egg filling.
