Baked Egg Tortilla (Tortilla Quiche)

Report
This Baked Egg Tortilla is a savory quiche made within a large flour tortilla, filled with a blend of eggs, spinach, cherry tomatoes, olives, spring onions, red bell pepper, cheddar, and feta. Baking the assembled tortilla results in a firm yet tender base with a flavorful, colorful filling. It offers a convenient way to enjoy eggs with vegetables and cheese all in one dish, suitable for breakfast, brunch, or light meals.

Description

The Baked Egg Tortilla uses a large flour tortilla pressed into a baking dish as the crust, layered with spinach, then filled with a whisked mixture of eggs combined with chopped vegetables and grated cheddar and crumbled feta cheeses. Baking at 200°C (400°F) for about 20-25 minutes cooks the eggs set while the cheese melts and the tortilla crisps slightly along the edges.

Chopped vegetables add freshness and texture while the combination of cheddar and feta brings both creamy and tangy notes. The spinach layer beneath helps keep the tortilla crisp bottom and contributes mild bitterness that balances the richness. Chopped chives sprinkled on the finished dish add a mild onion aroma.

This tortilla quiche works well sliced into wedges for serving at breakfast or brunch. It can be a satisfying vegetarian-friendly dish and is flexible enough to customize by adding other vegetables or mild spices.

To avoid overflowing, ensure the tortilla is not overfilled and leave some space at the top to account for egg rising. For a thicker crust, doubling the tortilla can be done. For a spicy variation, consider adding chili flakes or jalapeños to the egg mixture.
