Ingredients
For the potatoes:
- 3-4 Russet potatoes
- 2 Tablespoons olive oil
- 2 ½ teaspoons kosher salt divided
- 2 ½ teaspoons granulated sugar divided
- 1 ½ teaspoon cinnamon divided
- ½ teaspoon nutmeg divided
For the dressing:
- ½ cup mayonnaise
- ½ cup sour cream
- ½ teaspoon black pepper
- ½ teaspoon kosher salt
- ¼ cup milk
- ½ cup crumbled blue cheese
Instructions
- Preheat oven to 450 degree F. Scrub the potatoes clean and dry completely. Cut potatoes lengthwise into thin strips (about 1/4 inch thick).
- In a small bowl, combine 1 teaspoon kosher salt, 1 teaspoon sugar, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg. Set aside, this will be used to sprinkle over potatoes after cooking.
- In a large bowl, combine cut potatoes with olive oil and remaining 1 1/2 teaspoon kosher salt, 1 1/2 teaspoon sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Mix gently.
- Pour potatoes onto a large baking sheet (in a single layer as much as possible). Bake for 45 minutes, using a spatula, turn the potatoes over on the baking sheet every 15 minutes.
- While the potatoes are cooking, prepare the dressing. Combine all the dressing ingredients into a small saucepan. Simmer over low heat until smooth and warm. Keep warm until ready to serve. This may also be heated in the microwave.
- Remove potatoes from oven and immediately sprinkle with reserved cinnamon mixture. Serve with blue cheese dressing.
Notes
- Not a fan of blue cheese? Baked French Fries are also delicious served up with a side of homemade ranch dressing, Tzatziki sauce or chimichurri sauce!
- For perfectly golden, crispy fries turn the potatoes every 15 minutes as they bake!
- Keep dressing warm until ready to serve. If it cools down while the potatoes are baking, reheat it in the microwave.
- Milk. I usually opt for whole milk, but buttermilk is wonderful too. Don't have any? Make my buttermilk substitute instead!
