French Toast:

  • 2 egg
  • 1/2 cup milk
  • 2 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 6 lices brioche

Berry Compote:

  • 2 cups mixed berries strawberries, blueberries and raspberries
  • 1 tbsp sugar
  • powdered sugar optional

Instructions

  1. Preheat the oven to 350F, line a baking sheet with parchment paper.
  2. In a shallow bowl or a pie pan, mix eggs, milk, sugar and vanilla extract.
  3. Cut the brioche slices each into three sticks (You will have 18 sticks), place them two by two on top of each other (you will have 9 thick sticks)
  4. Dip a thick stick in egg and milk mixture, shake it a little bit so the extra egg mixture drips down, place the French toast stick on the baking sheet. Repeat with the remaining brioche sticks.
  5. Bake in the oven for 20 minutes.
  6. As the French toasts are being baked, mix berries and sugar in a small pot and put it over medium heat, stir every 5 minutes to prevent it from sticking to the bottom of the pot. If your berries are too sour, add more sugar. Cook until berries are mashed and blended, about 20 minutes.
  7. Place the French toast sticks on a plate and top with some berry compote and powdered sugar if desired.
