Baked Honey Balsamic Chicken Breast and Veggies

Baked Honey Balsamic Chicken Breast and Veggies features bite-sized chicken cubes and chopped vegetables coated in a sweet-tangy marinade of balsamic vinegar, honey, and herbs. Roasting at high heat produces tender chicken and crisp-tender vegetables with slightly caramelized edges.

Description

This recipe involves cutting boneless skinless chicken breasts into cubes alongside broccoli florets, red bell pepper, and chopped yellow onion. The ingredients are tossed in a mixture of extra virgin olive oil, balsamic vinegar, honey, salt, garlic powder, and dried oregano for a balanced marinade that enhances natural sweetness and adds savory depth.

Roasting the chicken and vegetables on a parchment-lined baking sheet at 400°F for 16 minutes followed by a brief broil crisps the edges lightly while maintaining moistness inside. Ensuring chicken reaches an internal temperature of 165°F guarantees food safety and optimal doneness.

The result is a wholesome, flavorful one-pan meal featuring tender chicken and bright, roasted vegetables ideal for a balanced dinner.
